Is it actually possible to get my partner’s messages on my phone through syncing or settings? I’m confused about what’s technically possible.

Unfortunately, directly syncing messages from your partner’s phone to yours isn’t really possible, especially if they use an iPhone. Apple has really tight security and privacy features, which is a good thing! This makes it difficult (and generally illegal) to just access someone else’s messages.
I’m not super familiar with Android, but I know iOS is very locked down. There are apps that claim to do this, but many are scams or require you to jailbreak the iPhone, which I would never recommend. Jailbreaking voids your warranty and makes your phone way less secure.
If you are worried about your partner I recommend having an open and honest conversation with them.
