Changing your Instagram email is pretty straightforward. You can do it right in the app – just go to your profile, tap the menu icon (three lines), then Settings > Account > Personal Information > Email Address. Update it there, and IG will likely send a verification link to your new email.
As for whether it affects anything else, it shouldn’t, other than changing where Instagram sends notifications and account-related stuff. Just make sure you can still access the old email in case Instagram needs to send a security alert there.
I’ve found iOS apps in general are better with account recovery than Android, so it’s good you’re keeping your info up-to-date.
